Jay Mendez is in his first season as a student assistant coach for Viking Baseball at Valley City State University. A native of Oceanside, California, Mendez brings firsthand collegiate experience and a strong work ethic to his coaching role. He played three years at Shasta College before transferring to VCSU for his final two seasons, finishing his career as a right-handed pitcher.
Mendez made 34 pitching appearances and pitched 45.2 innings for the Vikings during his 2 year career. In 2025 he had standout performances against Fort Lauderdale and in the 2025 NSAA tournament against Bellevue. Mendez had 4 consecutive scoreless NSAA appearances during April of the 2025 season.Â
Prior to joining VCSU, Mendez coached a middle school team in Redding, California, for two years. He is currently working toward his teaching license in Physical Education while holding an AA in Social Sciences and Physical Education and completing a minor in Coaching. In his role as a student assistant, Mendez contributes to player development, bullpen management, and day-to-day program operations, helping guide pitchers and position players alike while gaining valuable experience toward his goal of continuing a collegiate coaching career.
